Proton NMR was used to characterize aquafaba composition before and after ultrafiltration through membranes with different molecular weight cut offs (MWCOs of 3, 10, or 50 kDa), and a protocol for electrophoresis, and peptide mass fingerprinting provided valuable information regarding components responsible for aquAFaba functional properties.

The extracted Sparan with beta-(1-->3) linkages showed a remarkably high water solubility of 90% even after 10 min of incubation at room temperature, suggesting that this nanoknife method could be used to produce beta-D-glucan for food, cosmetic, and pharmaceutical industries.
