Soy protein isolate has been hydrolysed using one- or two-stage scheme. Two-stage scheme of soy protein isolate hydrolysis by Flavourzyme followed by Pancreatin provided 97% of the initial protein in soluble form. The structures with molecular weights over than 28 kD were eliminated, as determined by size-exclusion chromatography.

Proteolysis and intestinal absorption of 3H-protein alimentary antigens (bovine serum albumin--BSA and chicken ovalbumin--OVA) administered jointly to the digestive tract of rats were studied. It was shown that antigenic structure of OVA is marked by a far greater resistance in the course of protein assimilation by the body as compared with that of BSA.
