Kernel characteristics, particularly kernel weight, kernel size, and grain protein content, are important components of grain yield and quality in wheat. Development of high performing wheat…
Starch with a slow digestion property produced by altering its chain length, branch density, and crystalline structure.
- Z. Ao, S. Simsek, Genyi Zhang, M. Venkatachalam, B. Reuhs, B. Hamaker
- Chemistry, MedicineJournal of Agricultural and Food Chemistry
- 8 May 2007
Both the increase of the starch branch density and the crystalline structure in the treated starches likely contribute to their slow digestion property.
Analysis of Deoxynivalenol and Deoxynivalenol-3-glucoside in wheat
Quality of bread made from ozonated wheat (Triticum aestivum L.) flour.
- H. Sandhu, F. Manthey, S. Simsek
- Chemistry, MedicineThe Journal of the Science of Food and…

Bread made from flour exposed to ozone for 4.5 min or flour that contained 100 g kg(-1) fully ozonated flour had greater specific loaf volume and whiter crumb compared to bread made with control flour.
Ozone gas affects physical and chemical properties of wheat (Triticum aestivum L.) starch
Dissection of Genetic Factors underlying Wheat Kernel Shape and Size in an Elite × Nonadapted Cross using a High Density SNP Linkage Map
New knowledge is provided on the genetic dissection of kernel morphology, with a much higher resolution, which may aid further improvement in wheat yield and quality using genomic tools.
Starch characteristics of dry peas (Pisum sativum L.) grown in the USA.
Detailed Composition Analyses of Diverse Oat Genotype Kernels Grown in Different Environments in North Dakota
ABSTRACT Nutritional composition of oat kernels from 18 genotypes grown in six environments in North Dakota, U.S.A., was analyzed by chemical means. Of the macronutrients, mean starch concentration…
Effect of Kernel Size and Mill Type on Protein, Milling Yield, and Baking Quality of Hard Red Spring Wheat
ABSTRACT Optimization of flour yield and quality is important in the milling industry. The objective of this study was to determine the effect of kernel size and mill type on flour yield and end-use…
Comparison Between Potassium Bromate and Ozone as Flour Oxidants in Breadmaking
ABSTRACT The objective of this research was to compare the efficacy of potassium bromate with that of ozone treatment in wheat flour oxidation for breadmaking. In the first experiment, flour was…
