Effect of natural catalysts, isothiocyanates and polysulfides, on Z-isomerization and decomposition of (all-E)-carotenoids (lycopene, β-carotene, astaxanthin) following heat treatment and the simultaneous use of AITC and DADS resulted in a synergetic effect on the Z- isomerization efficiency.
