The utilisation of nitrogenous compounds by commercial non-Saccharomyces yeasts associated with wine.
The data suggest that declining populations of non-Saccharomyces yeasts release nitrogen and supports the activity of S. cerevisiae, and provide the most detailed assessment of nitrogen utilisation by the investigated yeast strains in a wine environment. Expand
Candida pyralidae killer toxin disrupts the cell wall of Brettanomyces bruxellensis in red grape juice
The possible mode of action of CpKT1 on B. bruxellensis cells in red grape juice is reported and it is shown that the cells secrete polypeptide A, which is a major component of toxins in the wine spoilage yeast. Expand
